Thengai Paal Payasam is a traditional, dairy-free South Indian kheer made using fresh coconut milk, jaggery, and raw rice. It is rich, naturally sweet, and comes together in about 30 minutes.
Ingredients
- 2.5 cups thick and thin coconut milk combined
- 1 cup powdered jaggery
- 3 tablespoons raw rice (soaked for 30 minutes and ground to a paste)
- 2 tablespoons grated coconut
- 1 tablespoon ghee (clarified butter)
- 1 tablespoon cashews
- 1 teaspoon cardamom powder
Instructions
- Cook the rice base: Mix the ground rice paste with a cup of water in a pan. Cook on medium heat for 10 to 12 minutes, stirring often until it turns thick and porridge-like.
- Melt the jaggery: In a separate small pan, melt the powdered jaggery with a little water, then strain it to remove dirt.
- Combine: Stir the clean jaggery syrup and cardamom powder into the cooked rice paste. Cook for 2 more minutes.
- Add coconut milk: Turn off the heat completely (do not boil after adding coconut milk to prevent curdling). Pour in the thin and thick coconut milk and mix well.
- Garnish: Fry the cashews and grated coconut in ghee until golden brown, then mix them into the payasam.

- Coconut milk is high in saturated fat and calories, making it unsafe or unsuitable for people with coconut allergies, high cholesterol, or heart disease, those trying to lose weight, infants, and people with severe digestive sensitivities like IBS.MMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMMM
- Who Should Avoid or Limit Coconut Milk
- People with coconut allergies: Anyone who gets an allergic reaction to coconut must avoid it completely, as reactions can sometimes be severe. [1]
- People with high cholesterol or heart disease: Canned coconut milk is very rich in saturated fats, which can raise bad LDL cholesterol levels
- Individuals managing weight gain: It is very calorie-dense, so drinking it in large amounts can add unwanted pounds.
- Infants: Plant-based milks do not have the right nutrients and should never be given to babies.
- People with sensitive stomachs: The rich oils and high fat content can trigger acid reflux, bloating, gas, or diarrhea in some people.
